This is a delicious and nutritious keto friendly recipe for Low Carb Eggplant Hash Eggs. It's a perfect breakfast or brunch dish that is easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 1 medium eggplant, diced
- 2 eggs
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup parsley, chopped
Instructions[edit | edit source]
- Heat the olive oil in a large skillet over medium heat.
- Add the eggplant, onion, and garlic to the skillet. Cook for about 10 minutes, or until the eggplant is soft and the onions are translucent.
- In a separate bowl, beat the eggs with the salt and pepper.
- Pour the beaten eggs over the eggplant mixture in the skillet. Cook for about 5 minutes, or until the eggs are set.
- Sprinkle the parsley over the top of the hash. Serve hot.
