Low Carb Empanadas with Beef Filling is a delicious and healthy keto friendly recipe. This recipe is perfect for those who are on a ketogenic diet and are looking for a tasty and satisfying meal.
Ingredients[edit | edit source]
- 1 cup of almond flour
- 1/4 cup of coconut flour
- 1/2 teaspoon of xanthan gum
- 1/2 teaspoon of salt
- 1/2 cup of butter
- 1 egg
- 1 pound of ground beef
- 1/2 cup of onion, chopped
- 2 cloves of garlic, minced
- 1/2 cup of green bell pepper, chopped
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
Instructions[edit | edit source]
- In a bowl, combine the almond flour, coconut flour, xanthan gum, and salt.
- Add the butter and egg to the flour mixture and mix until a dough forms.
- Roll out the dough and cut into circles using a round cutter.
- In a pan, cook the ground beef until browned. Add the onion, garlic, and green bell pepper and cook until softened.
- Add the cumin, paprika, salt, and pepper to the beef mixture and stir to combine.
- Place a spoonful of the beef mixture onto each dough circle and fold over, sealing the edges with a fork.
- Bake at 350 degrees for 20-25 minutes, or until golden brown.
