This is a delicious and healthy keto friendly recipe for Low Carb Loaded Cauliflower Mash. It's a perfect side dish for any meal and is sure to satisfy your cravings without the guilt.

  1. Cut the cauliflower into florets and steam until tender.
  2. Once the cauliflower is cooked, drain it well and then mash it in a large bowl.
  3. Add the sour cream, half of the cheddar cheese, bacon bits, and green onions to the mashed cauliflower. Mix well.
  4. Season with salt and pepper to taste.
  5. Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
  6. Bake at 350 degrees for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Garnish with additional green onions and bacon bits if desired. Serve hot.
