This is a delicious and healthy keto friendly recipe for Low Carb Loaded Cauliflower Mash. It's a perfect side dish for any meal and is sure to satisfy your cravings without the guilt.
Ingredients[edit | edit source]
- 1 large head of cauliflower
- 1/2 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1/2 cup of bacon bits
- 2 green onions, chopped
- Salt and pepper to taste
Instructions[edit | edit source]
- Cut the cauliflower into florets and steam until tender.
- Once the cauliflower is cooked, drain it well and then mash it in a large bowl.
- Add the sour cream, half of the cheddar cheese, bacon bits, and green onions to the mashed cauliflower. Mix well.
- Season with salt and pepper to taste.
- Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
- Bake at 350 degrees for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with additional green onions and bacon bits if desired. Serve hot.
