Low carb meringues are a delicious and healthy dessert option for those following a keto diet. They are light, airy, and sweet, making them the perfect treat for any occasion.

  1. Preheat your oven to 225 degrees F (105 degrees C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until they become frothy.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the erythritol, one tablespoon at a time, while continuing to beat the egg whites.
  5. Once all the erythritol has been added, beat in the vanilla extract.
  6. Continue to beat the mixture until stiff peaks form.
  7. Spoon the meringue mixture onto the prepared baking sheet, forming small mounds.
  8. Bake in the preheated oven for 1 hour, or until the meringues are crisp and dry.
  9. Turn off the oven and leave the meringues in the oven for another hour to dry out further.
  10. Remove from the oven and let cool completely before serving.
