This is a delicious and healthy recipe for a low carb Mexican style zucchini. It's perfect for those following a keto diet as it's high in healthy fats and low in carbs.
Ingredients[edit | edit source]
- 2 large zucchini
- 1 lb ground beef
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato, diced
- 1/2 cup bell pepper, chopped
- 1/2 cup cheese, shredded
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Cilantro for garnish
Instructions[edit | edit source]
- Preheat the oven to 375 degrees F.
- Cut the zucchini in half lengthwise and scoop out the center to create a boat.
- In a large skillet, cook the ground beef, onion, and garlic until the beef is browned.
- Add the tomato, bell pepper, cumin, chili powder, salt, and pepper to the skillet and stir to combine.
- Spoon the beef mixture into the zucchini boats and top with shredded cheese.
- Bake for 15-20 minutes or until the zucchini is tender and the cheese is melted.
- Garnish with cilantro before serving.
