Low Carb Mushroom Cauliflower Risotto is a delicious and healthy keto friendly dish. It is made with cauliflower, mushrooms, and other fresh ingredients. This dish is perfect for those who are on a ketogenic diet and want to enjoy a hearty and satisfying meal.
Ingredients[edit | edit source]
- 1 large cauliflower, riced
- 2 cups of sliced mushrooms
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of Parmesan cheese, grated
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish

- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and sauté until they become translucent.
- Add the mushrooms and cook until they are browned and tender.
- Add the riced cauliflower to the pan and stir well to combine.

- Stir in the Parmesan cheese and season with salt and pepper.
- Garnish with fresh parsley before serving.
