Low Carb Rutabaga Fritters with Avocado[edit | edit source]
Rutabaga fritters are a delicious and nutritious keto friendly meal. This recipe is low in carbs and high in healthy fats, making it perfect for those following a ketogenic diet.
Ingredients[edit | edit source]
- 2 medium Rutabagas, peeled and grated
- 1 ripe Avocados, peeled and pitted
- 2 Eggs
- 1/2 cup Almond flour
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 tablespoons Olive oil
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the grated rutabaga, eggs, almond flour, salt, and pepper. Mix until well combined.
- Heat the olive oil in a large skillet over medium heat.
- Form the rutabaga mixture into small patties and place them in the skillet.
- Cook the fritters for about 5 minutes on each side, or until they are golden brown and crispy.
- While the fritters are cooking, mash the avocado in a small bowl.
- Serve the fritters hot, topped with the mashed avocado.
