Low Carb Salmon Poke Bowl with Zoodles is a delicious and healthy keto friendly recipe. This dish is packed with protein from the salmon, and the zoodles (zucchini noodles) provide a low carb alternative to traditional rice.
Ingredients[edit | edit source]
- 1 large zucchini, spiralized into noodles
- 200g fresh salmon fillet, diced
- 1/2 avocado, diced
- 1/4 cup soy sauce (or tamari for gluten free)
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger, grated
- 1/2 teaspoon garlic, minced
- 1 tablespoon sesame seeds
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions[edit | edit source]
- In a bowl, combine the soy sauce, sesame oil, ginger, garlic, and sesame seeds. Add the diced salmon and let it marinate for at least 15 minutes.
- While the salmon is marinating, spiralize the zucchini into noodles and set aside.
- Dice the avocado and chop the green onions.
- Once the salmon has marinated, assemble the poke bowls. Start with a base of zoodles, then top with the marinated salmon, diced avocado, and chopped green onions.
- Season with salt and pepper to taste, and sprinkle with additional sesame seeds if desired.
