Low Carb Spinach and Artichoke Soup[edit | edit source]
This is a delicious and hearty keto friendly soup that is perfect for a cold day. It is packed with nutritious spinach and artichoke, and is low in carbs, making it perfect for those following a ketogenic diet.
Ingredients[edit | edit source]
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) artichoke hearts, drained and chopped
- 4 cups fresh spinach
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
- Add the artichoke hearts and spinach to the pot and cook until the spinach is wilted.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
- Stir in the heavy cream and Parmesan cheese. Continue to cook the soup until it is heated through.
- Season the soup with salt and pepper to taste. Serve hot.
