For the Herb Dressing[edit | edit source]

Instructions[edit | edit source]

  1. Preheat your oven to 200°C (390°F). Toss the pumpkin in olive oil, salt, pepper, paprika, cumin, coriander, and turmeric. Spread out on a baking tray and roast for 20-25 minutes until tender.
  2. While the pumpkin is roasting, heat a pan over medium heat. Add the tempeh cubes and cook until browned on all sides. Remove from heat and set aside.
  3. To make the herb dressing, combine all ingredients in a jar and shake well to combine.
  4. In a large bowl, combine the roasted pumpkin, cooked tempeh, spinach, kale, and broccoli. Drizzle with the herb dressing and toss to combine.
