This is a delicious and healthy keto friendly recipe for a low carb vegetable soup featuring fennel and celery root. It's easy to prepare and packed with nutrients, making it a perfect choice for those following a ketogenic diet.
Ingredients[edit | edit source]
- 1 large fennel bulb, thinly sliced
- 1 large celery root, peeled and diced
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 quart chicken broth
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until they begin to soften.
- Add the fennel and celery root to the pot and cook for another 5-7 minutes, until the vegetables start to soften.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste. Serve hot, garnished with fresh parsley.
