Low carb vegetarian zucchini boats
Low Carb Vegetarian Zucchini Boats[edit | edit source]

Ingredients[edit | edit source]
- 4 medium zucchini
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, finely chopped
- 1 cup mushrooms, finely chopped
- 1 cup spinach, chopped
- 1 cup tomatoes, chopped
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a boat.
- In a large pan, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are tender.
- Add the spinach and tomatoes to the pan and cook until the spinach is wilted.
- Remove the pan from the heat and stir in the feta cheese. Season with salt and pepper.
- Fill each zucchini boat with the vegetable mixture.
- Place the zucchini boats on a baking sheet and bake for 25 minutes, or until the zucchini is tender.
- Serve the Low Carb Vegetarian Zucchini Boats hot.
