Low Carb Zucchini Bacon Fritters with Avocado Mayo and Crispy Egg[edit | edit source]
Ingredients[edit | edit source]
- 2 medium zucchinis, grated
- 4 slices of bacon, cooked and crumbled
- 1/2 cup almond flour
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 ripe avocado
- 1 tablespoon mayonnaise
- 1 egg for frying
Instructions[edit | edit source]
- Squeeze the excess moisture out of the grated zucchini.
- In a large bowl, combine the zucchini, crumbled bacon, almond flour, beaten eggs, salt, and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Scoop the zucchini mixture into the skillet and flatten with a spatula.
- Cook the fritters for 3-4 minutes on each side, until golden brown.
- In a separate bowl, mash the avocado and mix with the mayonnaise.
- Fry the remaining egg to your liking.
- Serve the fritters with a dollop of avocado mayo and the crispy egg on top.
