Low Carb Zucchini Bacon Fritters with Avocado Mayo and Crispy Egg[edit | edit source]

Instructions[edit | edit source]

  1. Squeeze the excess moisture out of the grated zucchini.
  2. In a large bowl, combine the zucchini, crumbled bacon, almond flour, beaten eggs, salt, and pepper.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Scoop the zucchini mixture into the skillet and flatten with a spatula.
  5. Cook the fritters for 3-4 minutes on each side, until golden brown.
  6. In a separate bowl, mash the avocado and mix with the mayonnaise.
  7. Fry the remaining egg to your liking.
  8. Serve the fritters with a dollop of avocado mayo and the crispy egg on top.
