This is a delicious and hearty keto friendly recipe for Mediterranean Tomato Stew with Calamari. It's packed with flavor and is perfect for a cozy dinner.
Ingredients[edit | edit source]
- 1 kg of fresh calamari, cleaned and cut into rings
- 2 tablespoons of olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 can of tomatoes, diced
- 1 cup of chicken broth
- 1/2 cup of white wine
- 1 teaspoon of oregano
- 1 teaspoon of basil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté until they are soft and fragrant.
- Add the calamari rings and cook for about 5 minutes, until they become opaque.
- Add the tomatoes, chicken broth, white wine, oregano, basil, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, until the calamari is tender and the flavors are well combined.
- Serve the stew hot, garnished with fresh parsley.
