No Bake Keto Cheesecake with Toppings[edit | edit source]
Ingredients[edit | edit source]
- 2 cups of Almond Flour
- 1/2 cup of Butter
- 1 cup of Erythritol
- 1 tsp of Vanilla Extract
- 2 cups of Cream Cheese
- 1 cup of Heavy Cream
- 1/2 cup of Lemon Juice
- 1/2 cup of Strawberries (optional)
- 1/2 cup of Blueberries (optional)
Instructions[edit | edit source]
- Melt the butter and mix it with the almond flour and 1/2 cup of erythritol. Press this mixture into the bottom of a springform pan to form the crust.
- In a separate bowl, mix the cream cheese, heavy cream, the remaining erythritol, and vanilla extract until smooth.
- Pour the cream cheese mixture over the crust in the springform pan.
- Refrigerate for at least 4 hours, or until set.
- Before serving, top with lemon juice and optional strawberries and blueberries.
