No Bake Keto Cheesecake with Toppings[edit | edit source]

  1. Melt the butter and mix it with the almond flour and 1/2 cup of erythritol. Press this mixture into the bottom of a springform pan to form the crust.
  2. In a separate bowl, mix the cream cheese, heavy cream, the remaining erythritol, and vanilla extract until smooth.
  3. Pour the cream cheese mixture over the crust in the springform pan.
  4. Refrigerate for at least 4 hours, or until set.
  5. Before serving, top with lemon juice and optional strawberries and blueberries.
