Parchment Baked Salmon with Spinach and Egg[edit | edit source]

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Lay out the parchment paper on a baking sheet.
  3. Place the salmon fillets in the center of each parchment paper.
  4. Drizzle each salmon fillet with 1 tablespoon of olive oil.
  5. Season the salmon fillets with salt and pepper to taste.
  6. Place 1 cup of spinach on top of each salmon fillet.
  7. Crack an egg on top of the spinach.
  8. Fold the parchment paper over the salmon and spinach, sealing the edges to create a pouch.
  9. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the egg is set.
  10. Carefully open the parchment paper to avoid steam, and serve immediately.
