Parchment Baked Salmon with Spinach and Egg[edit | edit source]
Ingredients[edit | edit source]
- 2 Salmon fillets
- 2 cups of fresh Spinach
- 2 Eggs
- 2 tablespoons of Olive oil
- Salt and pepper to taste
- 2 sheets of Parchment paper
Instructions[edit | edit source]
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Lay out the parchment paper on a baking sheet.
- Place the salmon fillets in the center of each parchment paper.
- Drizzle each salmon fillet with 1 tablespoon of olive oil.
- Season the salmon fillets with salt and pepper to taste.
- Place 1 cup of spinach on top of each salmon fillet.
- Crack an egg on top of the spinach.
- Fold the parchment paper over the salmon and spinach, sealing the edges to create a pouch.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the egg is set.
- Carefully open the parchment paper to avoid steam, and serve immediately.
