Persian Chicken Skewers with Cauli Rice and Garlic Sauce[edit | edit source]
Ingredients[edit | edit source]
- Chicken breast (500g)
- Garlic cloves (3)
- Lemon juice (2 tablespoons)
- Olive oil (2 tablespoons)
- Salt (1 teaspoon)
- Pepper (1/2 teaspoon)
- Saffron threads (1/2 teaspoon)
- Cauliflower (1 head)
- Butter (2 tablespoons)
- Parsley (1 tablespoon, chopped)
Instructions[edit | edit source]
- Cut the chicken into cubes and place in a bowl.
- In a separate bowl, mix together the garlic, lemon juice, olive oil, salt, pepper, and saffron.
- Pour the marinade over the chicken and let it sit for at least 2 hours.
- Thread the chicken onto skewers and grill for about 10 minutes on each side.
- While the chicken is grilling, cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat the butter in a pan and add the cauliflower rice. Cook for about 5 minutes, until tender.
- Serve the chicken skewers over the cauliflower rice and garnish with parsley.
