  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Toss the cauliflower florets in olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  3. While the cauliflower is roasting, season the pork chops with salt and pepper. Heat a skillet over medium-high heat and cook the pork chops for 5-7 minutes on each side, or until they reach an internal temperature of 145 degrees F (63 degrees C).
  4. In a small bowl, combine the softened butter, grated Parmesan cheese, and chopped herbs. Mix until well combined.
  5. Once the pork chops are cooked, remove them from the skillet and let them rest for a few minutes. Spread the Parmesan herb butter over the pork chops while they are still hot.
  6. Serve the pork chops with the roasted cauliflower on the side.
