Pork Scallopini is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 4 pork cutlets
- Salt and pepper to taste
- 1/2 cup almond flour
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 lemon, juiced
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
Instructions[edit | edit source]
- Season the pork cutlets with salt and pepper, then dredge them in the almond flour.
- Heat the olive oil in a large skillet over medium heat. Add the pork cutlets and cook until golden brown on both sides, about 3-4 minutes per side. Remove the pork from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute. Add the chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2-3 minutes.
- Return the pork to the skillet and simmer in the sauce for another 2-3 minutes, until the pork is cooked through and the sauce has thickened. Sprinkle with the chopped parsley before serving.
