This is a delicious and easy-to-make keto friendly recipe for Prosciutto and Manchego Cheese Salad. It's perfect for a quick lunch or a light dinner.
Ingredients[edit | edit source]
- 4 slices of prosciutto
- 1 cup of manchego cheese, shredded
- 2 cups of mixed salad greens
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste

- Start by laying out the salad greens on a large plate or in a salad bowl.
- Arrange the prosciutto slices and cherry tomatoes on top of the greens.
- Sprinkle the shredded manchego cheese over the salad.
- In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.
