Quick and Easy Béarnaise Sauce[edit | edit source]

This is a simple and delicious recipe for a keto friendly Béarnaise sauce. It's perfect for steak, vegetables, or any other keto-friendly dishes you might be preparing.

  1. Combine the vinegar, wine, and shallots in a small saucepan. Bring to a boil over medium heat and cook until the liquid is reduced to about 2 tablespoons. This should take about 10 minutes.
  2. Strain the reduction into a heatproof bowl, pressing on the shallots to extract as much liquid as possible. Discard the shallots.
  3. Add the egg yolks to the bowl with the reduction. Set the bowl over a saucepan of barely simmering water (do not let the bottom of the bowl touch the water) and whisk until the mixture is thick and creamy, about 2 minutes.
  4. Gradually whisk in the melted butter until the sauce is thick and smooth. Stir in the tarragon and season with salt and pepper. Serve immediately.
