Quick Swedish Keto Hazelnut Cookies are a delicious and easy-to-make treat that are perfect for those following a keto or low-carb diet.

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped hazelnuts, almond flour, and erythritol.
  3. In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Using a tablespoon, scoop out the dough and form into balls. Place on the prepared baking sheet.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
