Reverse sear steak oven is a steak oven is a process of cooking steak quicker by baking in the oven followed by searing on a pan.

Steps in reverse searing steak

  • The first step is cooking the steak at low heat until the center reaches desired temperature
  • The next step is cooking with high temperature to achieve the Maillard reaction on the outside.

Benefits

This technique is typically recommended for thicker pieces of meat, 1-1 1/2 inches or thicker, allowing for consistent internal cooking temperature with only the outer portion becoming seared.
