Roasted Fennel Sugar Snap Salad is a delicious and nutritious keto friendly dish. It is packed with flavors and is perfect for those who are on a ketogenic diet.
Ingredients[edit | edit source]
- 2 large fennel bulbs, trimmed and cut into wedges
- 2 cups of sugar snap peas, trimmed
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of lemon juice
- 1/2 cup of Parmesan cheese, grated
- 1/4 cup of almonds, chopped
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Toss the fennel wedges and sugar snap peas in olive oil, salt, and pepper. Spread them out on a baking sheet.
- Roast in the preheated oven for about 20 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and let it cool for a few minutes.
- Drizzle the roasted vegetables with lemon juice, then sprinkle with Parmesan cheese and chopped almonds.
- Serve immediately.
