Roasted Tomato Salad[edit | edit source]
A delicious and healthy keto friendly recipe, the Roasted Tomato Salad is a perfect side dish or light meal. It's packed with flavor and nutrients, and is easy to prepare.
Ingredients[edit | edit source]
- 4 large tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 clove garlic, minced
- 1 tablespoon balsamic vinegar
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup feta cheese, crumbled
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Arrange the tomatoes on a baking sheet, cut sides up. Drizzle with olive oil and season with salt and pepper.
- Roast the tomatoes in the preheated oven for about 20 minutes, or until they are soft and slightly charred.
- While the tomatoes are roasting, combine the minced garlic and balsamic vinegar in a small bowl.
- Remove the tomatoes from the oven and drizzle the garlic-vinegar mixture over them.
- Sprinkle the chopped basil and crumbled feta cheese on top of the tomatoes.
- Serve the salad warm or at room temperature.
