Rotisserie Chicken Keto Chili Béarnaise Sauce[edit | edit source]
Ingredients[edit | edit source]
- 1 Rotisserie chicken
- 1 cup of heavy cream
- 2 tablespoons of Dijon mustard
- 1 tablespoon of white wine vinegar
- 1 tablespoon of tarragon
- 1 tablespoon of chili powder
- 1/2 cup of butter
- 4 egg yolks
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by shredding the Rotisserie chicken into bite-sized pieces and set aside.
- In a saucepan, combine the heavy cream, Dijon mustard, white wine vinegar, tarragon, and chili powder. Bring to a simmer over medium heat.
- In a separate bowl, whisk the egg yolks until they become frothy.
- Slowly pour the hot cream mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the sauce thickens.
- Remove from heat and whisk in the butter until it's fully incorporated. Season with salt and pepper to taste.
- Pour the sauce over the shredded chicken and serve.
