Rotisserie Chicken Keto Chili Béarnaise Sauce[edit | edit source]

  1. Start by shredding the Rotisserie chicken into bite-sized pieces and set aside.
  2. In a saucepan, combine the heavy cream, Dijon mustard, white wine vinegar, tarragon, and chili powder. Bring to a simmer over medium heat.
  3. In a separate bowl, whisk the egg yolks until they become frothy.
  4. Slowly pour the hot cream mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the sauce thickens.
  6. Remove from heat and whisk in the butter until it's fully incorporated. Season with salt and pepper to taste.
  7. Pour the sauce over the shredded chicken and serve.
