Saffron Flavored Fish Stew Aioli[edit | edit source]
Ingredients[edit | edit source]
- 2 tablespoons of Olive oil
- 1 large Onion, finely chopped
- 2 cloves of Garlic, minced
- 1 teaspoon of Saffron threads
- 1 cup of Fish stock
- 1 pound of firm white Fish, cut into chunks
- Salt and Pepper to taste
- 1 cup of Mayonnaise
- 1 tablespoon of Lemon juice
- 2 tablespoons of Parsley, chopped
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
- Stir in the saffron threads and cook for another minute.
- Add the fish stock and bring to a simmer.
- Add the fish chunks, season with salt and pepper, and simmer until the fish is cooked through, about 10 minutes.
- While the stew is cooking, make the aioli. In a small bowl, combine the mayonnaise, lemon juice, and parsley. Stir until well combined.
- Serve the stew hot, with a dollop of the aioli on top.
