  1. Cut the Saganaki cheese into slices and grill them until golden brown.
  2. Chop the cucumber, tomatoes, red onion, and bell peppers into bite-sized pieces.
  3. For the mint dip, blend the mint leaves, lemon juice, olive oil, salt, and pepper until smooth.
  4. Combine the grilled cheese and chopped vegetables in a bowl.
  5. Drizzle the mint dip over the salad before serving.
