Simple Low Carb Breakfast with Fried Eggs and Veggies[edit | edit source]
Ingredients[edit | edit source]
- 2 large eggs
- 1 tablespoon olive oil
- 1/2 bell pepper, diced
- 1/4 onion, diced
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a non-stick frying pan over medium heat.
- Add the onion and bell pepper to the pan and sauté until they begin to soften.
- Add the spinach to the pan and continue to sauté until it wilts.
- Crack the eggs into the pan and fry until they reach your desired level of doneness.
- Season with salt and pepper to taste.
- Serve hot and enjoy your simple low carb breakfast.
