Slow Cooked Keto Pork Roast Gravy[edit | edit source]
Ingredients[edit | edit source]
- 1 (3 pound) pork roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon xanthan gum
Instructions[edit | edit source]
- Season the pork roast with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork roast and sear on all sides until browned.
- Transfer the pork roast to a slow cooker. Pour the chicken broth and apple cider vinegar over the roast. Sprinkle with the minced garlic, thyme, and rosemary.
- Cover and cook on low for 8 hours.
- Remove the roast from the slow cooker and set aside. Pour the juices from the slow cooker into a saucepan.
- Sprinkle the xanthan gum over the juices and whisk to combine. Heat over medium heat until the gravy thickens.
- Slice the pork roast and serve with the gravy.
