Instructions[edit | edit source]

  1. Season the pork roast with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the pork roast and sear on all sides until browned.
  3. Transfer the pork roast to a slow cooker. Pour the chicken broth and apple cider vinegar over the roast. Sprinkle with the minced garlic, thyme, and rosemary.
  4. Cover and cook on low for 8 hours.
  5. Remove the roast from the slow cooker and set aside. Pour the juices from the slow cooker into a saucepan.
  6. Sprinkle the xanthan gum over the juices and whisk to combine. Heat over medium heat until the gravy thickens.
  7. Slice the pork roast and serve with the gravy.
