Smoked Salmon and Asparagus Frittata is a delicious and nutritious keto friendly dish. It is packed with protein and healthy fats, making it a perfect meal for those following a ketogenic diet.
Ingredients[edit | edit source]
- 8 large eggs
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 4 ounces smoked salmon, chopped
- 1/2 cup grated Parmesan cheese
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper. Set aside.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the onion and asparagus and cook until softened, about 5 minutes.
- Add the smoked salmon to the skillet and stir to combine.
- Pour the egg mixture over the salmon and asparagus. Sprinkle the Parmesan cheese on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and lightly browned on top.
- Let the frittata cool for a few minutes before slicing and serving.
