This Spicy Leftover Turkey Soup is a delicious and healthy way to use up your holiday leftovers. It's a keto friendly recipe that's packed with flavor and nutrients.
Ingredients[edit | edit source]
- 2 cups of leftover turkey, shredded
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 jalapeno, seeded and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 4 cups of chicken broth
- 1 can of diced tomatoes
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, jalapeno, and bell peppers. Cook until the vegetables are soft, about 5 minutes.
- Add the shredded turkey, chicken broth, diced tomatoes, cumin, and chili powder. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Serve the soup hot, garnished with fresh cilantro.
