Swedish Keto Gingerbread Cookies[edit | edit source]

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, baking soda, and spices.
  3. Melt the butter and add it to the dry ingredients along with the egg and vanilla extract.
  4. Mix everything together until a dough forms.
  5. Roll out the dough between two pieces of parchment paper until it's about 1/4 inch thick.
  6. Use a cookie cutter to cut out the gingerbread cookies.
  7. Place the cookies on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges start to brown.
  9. Allow the cookies to cool completely before serving.
