Taco stuffed portobello mushrooms
Keto Friendly Taco Stuffed Portobello Mushrooms[edit | edit source]

Ingredients[edit | edit source]
- 4 large Portobello mushrooms, stems removed
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 avocado, diced
- Olive oil for brushing
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Brush the Portobello mushrooms with olive oil and season with salt and pepper.
- Place the mushrooms on a baking sheet and bake for 10 minutes.
- While the mushrooms are baking, cook the ground beef in a skillet over medium heat until no longer pink.
- Drain the excess fat and add the taco seasoning, following the packet instructions.
- Remove the mushrooms from the oven and fill each one with the taco meat.
- Top each mushroom with shredded cheddar cheese.
- Return the mushrooms to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
- Top each mushroom with sour cream, diced avocado, and chopped cilantro before serving.
