Vegan Kale Spinach Soup[edit | edit source]
This is a recipe for a delicious and nutritious Vegan Kale Spinach Soup. It's a perfect dish for those following a keto diet as it's low in carbs and high in fiber.
Ingredients[edit | edit source]
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bunch of kale, stems removed and leaves chopped
- 1 bunch of spinach, stems removed and leaves chopped
- 4 cups of vegetable broth
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until they are soft and fragrant.
- Add the kale and spinach to the pot and cook until they are wilted.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for about 20 minutes.
- Use a blender or an immersion blender to puree the soup until it's smooth. Season it with salt and pepper to taste.
