  1. Pour the almond milk into a blender or food processor.
  2. Add the apple cider vinegar, Dijon mustard, salt, and black pepper.
  3. Blend the ingredients until they are well combined.
  4. While the blender or food processor is running, slowly pour in the avocado oil.
  5. Continue blending until the mixture thickens into a mayonnaise consistency.
  6. Taste and adjust the seasoning if necessary.
  7. Store the vegan keto mayo in an airtight container in the refrigerator.
