Vegetarian Keto Breakfast Casserole[edit | edit source]
Ingredients[edit | edit source]
- Almond milk - 1 cup
- Eggs - 6 large
- Spinach - 2 cups, chopped
- Bell peppers - 1 cup, diced
- Mushrooms - 1 cup, sliced
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - to taste
- Olive oil - 2 tablespoons
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the bell peppers and mushrooms, and sauté until they are soft.
- Add the spinach to the skillet and cook until it is wilted.
- In a large bowl, whisk together the eggs, almond milk, salt, and pepper.
- Add the cooked vegetables to the egg mixture and stir to combine.
- Pour the mixture into a greased casserole dish and sprinkle the cheddar cheese on top.
- Bake for 25-30 minutes, or until the eggs are set and the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving.
