Wild mushroom soup
Wild Mushroom Soup (Keto Friendly)[edit | edit source]
Ingredients[edit | edit source]
- 2 tablespoons of Olive oil
- 1 medium Onion, chopped
- 2 cloves of Garlic, minced
- 500 grams of assorted Wild mushrooms, chopped
- 1 liter of Chicken broth
- 1 cup of Heavy cream
- Salt and Pepper to taste
- Fresh Thyme for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until they become translucent.
- Add the chopped wild mushrooms to the pot and cook until they are tender.
- Pour in the chicken broth, bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Use a blender or immersion blender to puree the soup until it's smooth.
- Return the soup to the pot, stir in the heavy cream, and season with salt and pepper. Heat the soup for a few more minutes until it's hot.
- Serve the soup hot, garnished with fresh thyme.
