Wild Mushroom Soup (Keto Friendly)[edit | edit source]

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until they become translucent.
  2. Add the chopped wild mushrooms to the pot and cook until they are tender.
  3. Pour in the chicken broth, bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Use a blender or immersion blender to puree the soup until it's smooth.
  5. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper. Heat the soup for a few more minutes until it's hot.
  6. Serve the soup hot, garnished with fresh thyme.
