Zoodles with Tomatoes, Mushrooms and Parmesan Sauce[edit | edit source]
Ingredients[edit | edit source]
- 2 medium zucchinis, spiralized into zoodles
- 1 cup of tomatoes, diced
- 1 cup of mushrooms, sliced
- 1/2 cup of parmesan, grated
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pan over medium heat.
- Add the mushrooms and cook until they are soft and browned, about 5 minutes.
- Add the tomatoes to the pan and cook until they are soft, about 5 minutes.
- Add the zoodles to the pan and cook until they are heated through, about 2 minutes.
- Remove the pan from the heat and stir in the parmesan until it is melted and coats the zoodles.
- Season with salt and pepper to taste.
- Serve the zoodles hot, topped with extra parmesan if desired.
