Beef Stroganoff or Beef Stroganov (Russian: Бефстроганов Befstroganov) is a Russian dish of sautéed pieces of beef served in a sauce with sour cream. From its origins in mid-19th-century Russia, it has become popular around the world, with considerable variation from the original recipe.

The dish is named after one of the members of the influential Stroganov family. Count Pavel Stroganoff, a notable figure in 19th century Russia, is often associated with the creation of the dish, or at least its name. However, the recipe for Beef Stroganoff, as it is known today, did not appear in a cookbook until 1871.

Preparation[edit | edit source]

Beef Stroganoff is traditionally made from thinly cut, tender beef, onions, and mushrooms. These ingredients are quickly sautéed in butter and combined with a sour cream sauce. It is typically served over rice or noodles.

Variations[edit | edit source]

There are many variations of Beef Stroganoff. In the United States, it is often made with strips of beef and onions, and served over egg noodles. In the United Kingdom, a mustard and white wine sauce is sometimes used instead of sour cream. In Brazil, the dish is often made with chicken or shrimp instead of beef, and is served with potato sticks and rice.
