HACCP
Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive approach to food safety from biological, chemical, physical hazards and more recently radiological hazards in production processes that can cause the finished product to be unsafe, and designs measurements to reduce these risks to a safe level. This method, which is science-based and systematic, identifies specific hazards and measures for their control to ensure the safety of food. HACCP is used in the food industry to identify potential food safety hazards, so that key actions, known as Critical Control Points (CCPs) can be taken to reduce or eliminate the risk of the hazards being realized. The system is used at all stages of food production and preparation processes including packaging, distribution, etc.
Principles of HACCP[edit | edit source]
The HACCP system is based on seven principles:
- Conduct a Hazard Analysis: Identify potential hazards that could occur in the food production process.
- Determine the Critical Control Points (CCPs): Points in the process where the identified hazards can be prevented, eliminated, or reduced to safe levels.
- Establish Critical Limits: Maximum and/or minimum value to which a biological, chemical, or physical parameter must be controlled at a CCP to prevent, eliminate, or reduce to an acceptable level the occurrence of a food safety hazard.
- Monitor CCPs: Establish procedures to monitor the CCPs to ensure that the critical limits are being met.
- Establish Corrective Actions: Actions to be taken when monitoring indicates that a particular CCP is not under control.
- Verification Procedures: Activities other than monitoring that determine the validity of the HACCP plan and that the system is operating according to the plan.
- Record-Keeping and Documentation: Keeping records to demonstrate the effective application of the critical limits, CCP monitoring, corrective actions taken, and the handling of HACCP plan verification activities.

HACCP is applied in various stages of food production and preparation process including but not limited to, selection and handling of raw materials, procurement, processing, storage, distribution, and consumption of the finished product.

The implementation of HACCP can have numerous benefits including, but not limited to:
- Ensuring the safety of food for consumers
- Reducing foodborne disease
- Facilitating compliance with national and international food safety regulations
- Enhancing food quality
- Improving consumer confidence in food safety
Challenges in Implementing HACCP[edit | edit source]
Despite its benefits, the implementation of HACCP can present challenges such as:
- High initial setup costs
- Need for specialized training for staff
- Continuous monitoring and verification processes that require dedicated resources
