The Slow Food movement is a global initiative that promotes local food cultures and traditions, advocating for food that is good, clean, and fair. It was founded in 1986 in Italy by Carlo Petrini in response to the growing popularity of fast food and the diminishing appreciation for local culinary traditions. The movement emphasizes the importance of sustainable agriculture, biodiversity, and the preservation of regional food practices.

The Slow Food movement began in Italy as a reaction to the opening of a McDonald's restaurant near the Spanish Steps in Rome. Carlo Petrini and a group of activists sought to defend regional traditions, good food, gastronomic pleasure, and a slow pace of life. The movement quickly gained momentum and spread internationally, leading to the establishment of the Slow Food International organization in 1989.

Slow Food is based on three interconnected principles:

  • Good: Quality, flavorsome, and healthy food.
  • Clean: Production that does not harm the environment.
  • Fair: Accessible prices for consumers and fair conditions and pay for producers.
