Ají caballero

Ají caballero is a type of chili pepper native to Puerto Rico. It is also known as the Puerto Rican Yellow Chili and is one of the hottest peppers grown and used in the region. The Ají caballero is often used in Puerto Rican cuisine to add heat and flavor to a variety of dishes.

The Ají caballero pepper is small in size, typically measuring between 1 to 2 inches in length. The peppers are yellow in color when mature and have a wrinkled texture. Despite their small size, Ají caballero peppers pack a significant amount of heat. They are considered to be hotter than the jalapeño but not as hot as the habanero.

Cultivation[edit | edit source]

Ají caballero peppers are typically grown in the tropical climate of Puerto Rico. They require a well-drained soil and plenty of sunlight. The plants are bushy and can reach up to 3 feet in height. The peppers are usually harvested when they are fully mature and have reached their characteristic yellow color.

In Puerto Rican cuisine, Ají caballero peppers are used to add heat to a variety of dishes. They are often used in the preparation of sofrito, a sauce that is a staple in many Puerto Rican dishes. The peppers can also be used to make hot sauce or can be pickled. Despite their heat, Ají caballero peppers also have a fruity flavor that can enhance the taste of many dishes.
