Seibel's interest in viticulture was sparked by the phylloxera crisis that devastated European vineyards in the late 19th century. Phylloxera, a root-feeding insect, caused widespread destruction of Vitis vinifera vines, leading to a search for resistant grape varieties. Seibel dedicated his efforts to creating hybrid grapes that could withstand phylloxera and other diseases.

Seibel's approach involved cross-breeding Vitis vinifera with American grape species, which were naturally resistant to phylloxera. He meticulously selected parent plants and conducted controlled pollinations to produce new varieties.
