Allium is a large genus of flowering plants, belonging to the Amaryllidaceae family, known for their strong odor and flavor. The genus contains hundreds of distinct species, including many well-known vegetables and herbs such as onions (Allium cepa), garlic (Allium sativum), scallions, shallots, leeks (Allium ampeloprasum), and chives (Allium schoenoprasum). These plants are characterized by their bulbous root structure, although the size and shape of the bulb can vary significantly between species.
