Binissalem (DOP) is a Denominación de Origen Protegida (DOP) for wines located in the central region of the island of Mallorca, part of the Balearic Islands, Spain. Established as a Denominación de Origen (DO) in 1991, it was the first wine region on the Balearic Islands to achieve this status. The area is renowned for its long-standing viticultural traditions and the high quality of its wines, which are primarily produced from indigenous grape varieties.

The history of winemaking in the Binissalem region dates back to the Roman times, but it was during the Muslim rule of the island that viticulture was significantly developed. The modern era of winemaking began in the late 19th century when phylloxera devastated many of Europe's vineyards, sparing Mallorca. This led to a boom in wine production and exportation. However, the phylloxera eventually reached the island in the early 20th century, causing a decline in the wine industry. The establishment of the Binissalem DO in 1991 marked a turning point, leading to a resurgence in quality winemaking.

The Binissalem DOP covers a relatively small area in the center of Mallorca, encompassing the municipalities of Binissalem, Santa Maria del Camí, Sencelles, Consell, and Santa Eugènia. The region benefits from a Mediterranean climate, characterized by hot, dry summers and mild, wet winters. The Tramuntana mountain range to the north provides protection from the cold northern winds, creating a unique microclimate that is ideal for viticulture.

Grape Varieties[edit | edit source]

The primary red grape variety grown in the Binissalem DOP is Manto Negro, which is used to produce wines with soft tannins and fruity aromas. Other authorized red varieties include Callet, Tempranillo, Monastrell, and Cabernet Sauvignon. The leading white grape variety is Moll (also known as Prensal Blanc), which produces fresh, aromatic wines. Additional white varieties include Macabeo, Parellada, and Chardonnay.

Wines from the Binissalem DOP are known for their quality and distinctive character, reflecting the unique terroir of the region. Red wines dominate the production and are typically medium-bodied with a balance of fruit and spice. The white wines are appreciated for their freshness and aromatic complexity. The winemaking process in Binissalem adheres to strict regulations to ensure the quality and authenticity of its wines. This includes limited yields, specific grape varieties, and aging requirements. Red wines must be aged for a minimum of six months in oak barrels, while the prestigious Crianza, Reserva, and Gran Reserva categories have longer aging requirements.
