Can Fabes
Can Fabes[edit | edit source]
Can Fabes was a renowned restaurant located in Sant Celoni, Catalonia, Spain. It was known for its exceptional culinary creations and was considered one of the best restaurants in the world. Unfortunately, the restaurant closed its doors in 2011.
History[edit | edit source]
Can Fabes was founded in 1981 by Catalan chef Santi Santamaria. Santamaria had a vision of creating a restaurant that showcased the traditional Catalan cuisine with a modern twist. The restaurant quickly gained popularity and earned three Michelin stars, solidifying its reputation as a culinary destination.
Cuisine[edit | edit source]
The cuisine at Can Fabes was characterized by its focus on fresh, locally sourced ingredients. The restaurant emphasized the use of seasonal produce and traditional Catalan flavors. Each dish was meticulously prepared and presented, showcasing the chef's creativity and attention to detail.
Some of the signature dishes at Can Fabes included:
- Escudella i carn d'olla - a traditional Catalan stew made with various meats and vegetables.
- Canelons - pasta tubes filled with a variety of ingredients such as meat, fish, or vegetables.
- Crema Catalana - a creamy dessert similar to crème brûlée, flavored with cinnamon and lemon zest.
Closure[edit | edit source]
Despite its success, Can Fabes faced financial difficulties in the late 2000s. In 2011, the restaurant was forced to close its doors due to mounting debts. The closure of Can Fabes was a significant loss to the culinary world, as it was considered a pioneer in the Catalan gastronomy scene.
Legacy[edit | edit source]
Although Can Fabes is no longer in operation, its impact on the culinary world is still felt today. Many chefs who trained under Santi Santamaria went on to open their own successful restaurants, carrying on the traditions and techniques learned at Can Fabes.
