Chimay Brewery, also known as Abbaye Notre-Dame de Scourmont, is a Trappist brewery located in Chimay, Belgium. It is one of the eleven breweries in the world that are authorized to use the "Authentic Trappist Product" label.

The Chimay Brewery was founded in 1862 by monks from the Scourmont Abbey. The brewery has been producing beer for over 150 years and has gained international recognition for its high-quality Trappist beers.
Beers[edit | edit source]
Chimay Brewery produces several different types of beers, each with its own unique characteristics and flavors. These include:
- Chimay Red: Also known as "Première," this beer is a copper-colored ale with a fruity aroma and a slightly bitter taste.
- Chimay White: Also known as "Cinq Cents," this beer is a golden ale with a crisp and refreshing flavor.
- Chimay Blue: Also known as "Grande Réserve," this beer is a dark ale with a rich and complex taste, featuring notes of caramel and dried fruits.

The brewing process at Chimay Brewery follows traditional Trappist methods. The monks carefully select the finest ingredients, including malted barley, hops, and yeast, to create their unique beers.
