Column still
A column still, also known as a continuous still, is a type of distillation apparatus used in the production of spirits such as whiskey, vodka, and rum. Unlike the traditional pot still, which operates in batches, a column still allows for continuous operation, making it more efficient for large-scale production.
Design and Operation[edit | edit source]
The column still consists of a tall, vertical column filled with a series of perforated plates or trays. These plates create multiple stages of distillation within a single apparatus. The liquid mixture to be distilled, known as the wash, is introduced at the top of the column and flows downward. Steam is introduced at the bottom of the column and rises through the plates, causing the more volatile components of the wash to vaporize and ascend the column.
As the vapor rises, it encounters cooler temperatures and condenses on the plates, creating a reflux that increases the purity of the distillate. The less volatile components, which do not vaporize as easily, are collected at the bottom of the column as a liquid known as the stillage.

The primary advantage of a column still over a pot still is its ability to operate continuously, which significantly increases production efficiency. Additionally, the multiple stages of distillation within the column allow for a higher degree of separation and purification of the desired components, resulting in a higher-quality distillate.

The column still was invented in the early 19th century by Aeneas Coffey, an Irishman who improved upon earlier designs to create a more efficient distillation process. Coffey's still, also known as the Coffey still, revolutionized the spirits industry by allowing for continuous production and higher yields.
