Confrérie de la Chaîne des Rôtisseurs
Confrérie de la Chaîne des Rôtisseurs is an international gastronomic society founded in Paris in 1950. It is dedicated to promoting fine dining and preserving the camaraderie and pleasures of the table. The society is based on the traditions and practices of the old French royal guild of goose roasters, whose authority gradually expanded to the roasting of all poultry, meat and game.
History[edit | edit source]
The original guild of rôtisseurs was established in 1248 under the reign of Louis IX. The guild was responsible for refining the art of roasting geese, a popular dish at the time. Over the years, the guild expanded its activities to include all forms of roasting meats and poultry, and it became one of the most important guilds in France.
The guild continued to flourish until 1793 when it was disbanded during the French Revolution. It was not until 1950 that Dr. Auguste Becart, Jean Valby and "Prince" Curnonsky, and chefs Louis Giraudon and Marcel Dorin revived the guild as the Confrérie de la Chaîne des Rôtisseurs.
Structure and Activities[edit | edit source]
Today, the Confrérie de la Chaîne des Rôtisseurs is an international society with members in more than 80 countries around the world. The society is organized into national, regional, and local chapters, each of which hosts its own dinners and events.
